Gingerbread Blondies


Blondies are amazing. Think brownies but without the chocolate. Oh yes. The other day I had the brainwave to not only add ground ginger to them, but also add Golden Syrup (available a British Specialty shops or in the import aisle of large supermarkets. The most common brand is Lyle's). It was a triumph.

What you'll need:


  • 1 cup all-purpose flour
  • 1⁄4 teaspoon baking powder
  • 1⁄8 teaspoon baking soda
  • 1⁄8 teaspoon salt
  • 2 teaspoons ground ginger
  • 1⁄2 cup (1 stick) unsalted butter
  • 1 large egg
  • 1 large egg yolk
  • 1 tablespoon Golden Syrup
  • 1 1⁄2 teaspoons vanilla
  •  2⁄3 cup packed light brown sugar
  • 1⁄4 cup sugar




Preheat the oven to 350°F. Grease an 8-inch square baking pan with a LOT of butter. Whisk the flour, baking soda and powder and ginger together.


In a large heavy saucepan, melt the butter, then boil, stirring constantly. Let it boil for 4 mins and it will turn a delicious light brown. Add the Golden Syrup. Wait for it to cool then add the sugars, eggs, and vanilla.


Now stir this into the dry ingredients and scrape into your pan.
Bake until the top is golden brown and a toothpick inserted in the center comes out clean, 25 to 30 minutes. Cool completely in the pan on a rack.
