The Cheesecake of Passion


Who could resist a cheesecake? Not me and certainly not my husband. And passionfruit has a special meaning in our relationship (I used them to woo him - they are a rarity here but commonplace in Australia) so it's a match made in heaven.


  • Graham Cracker Crumbs
  • 1/2 cup pecans (optional)
  • Melted butter
  • 3 packages of cream cheese (8oz each)
  • 1.5 cups sugar
  • 4 eggs
  • 1/2c Sour Cream
  • dash of Vanilla
  • 5 Passionfruit
  • 1/2c sugar

First, make your crust. It's an inexact science. I do it by eye and dump a whole lotta crumbs in the bowl of a food processor with some melted butter and some pecans. I keep adding butter until it comes together nicely. Then press it into the bottom of a 10inch springform pan with the bottom of a glass.

Now beat the cream cheese and sugar together until they are smooth. Add the eggs, making sure they are well incorporated. Add the sour cream and vanilla. Pour onto the crust and smooth top. Bake for 1hr and 10 mins, then cool in the oven for about 20 mins before removing.

While it's cooling, take your passionfruit pulp and mix it with teh sugar and bring to the boil. Boil for a few minutes and then pour over the cooled cake. Chill for about 4 hours and then use it to acquire your future husband.
